Ep 15. Chipotle’s Sofritas Recipe I used to work at Chipotle and I fell in love with their food. But, recently their prices have gotten so expensive. So, I decided to make this series and share my knowledge. All of Chipotle’s recipe use healthy ingredients and are so easy to make. INGREDIENTS: For the marinade: - 1 medium green bell pepper - 1 medium tomato - 1/2 medium onion - 1/2 cup water - 2 chipotle peppers plus 2 tablespoons adobo sauce - 2 cloves garlic - 1 teaspoon red wine vinegar - 1 teaspoon ancho chile powder - 1 teaspoon ground cumin - ½ teaspoon dried oregano - ½ teaspoon Salt and freshly ground black pepper For the tofu: - 1 tablespoon olive oil or rice bran oil - 1 (16 ounce) package extra-firm tofu pressed, cut into 8 slices DIRECTIONS: 1. Prepare Marinade:     - Roughly dice the green bell pepper, tomato, and onion.     - Add the diced vegetables to a blender and blend until roughly combined.     - Add water, chipotle peppers, adobo sauce, garlic, red wine vinegar, ancho chile powder, cumin, oregano, salt, and pepper to the blender.     - Blend until smooth. Set the marinade aside. 2. Cook Tofu:     - Heat olive oil in a pan over medium heat.     - Cook tofu slices until golden brown on both sides.     - Transfer cooked tofu to a blender and pulse until crumbled into small bits. 3. Marinate Tofu:     - In a bowl, combine the crumbled tofu and the marinade.     - Mix well and let it marinate for at least 30 minutes, or up to overnight. 4. Cook Sofritas:     - Transfer the marinated tofu mixture to a pan.     - Bring to a boil over medium heat, then reduce to a simmer.     - Simmer for 10 minutes, stirring occasionally, until flavors meld together.
