Palestinian cookies @ndcmuscat My cat was on the table so go figure Ingredients: - 2 cups all purpose flour - 1 cup semolina - 1/3 cup sugar - 1 & 1/2 tsp baking powder - 1/4 tsp baking soda - pinch of salt - 1/2 to 3/4 cups of @ndcmuscat olive oil - 1 & 1/2 cups of water - 1 cup of palestinian nutella - 1 tbsp tahini - start by toasting the flour in a pan on low heat for at least 10 minutes till it slightly changes color. - run it through a sieve and add all the dry ingredients the whisk them very well. Add half a cup of olive oil or 3/4 of a cup if you want the cookies to be soft. - knead the oil into the dry ingredients by rubbing it in your hands for a couple of minutes. - add the palestinian nutella and do the same thing for at least 3 minutes or till properly mixed it. The dough will look super dry but thats ok. - add a 1/4 cup of water and keep kneading keep adding 1/4 cups at a time till you reach the consistency shown in the video. A soft dough that is workable and holding its shape. - brush a baking tray with tahini and place the dough on it. Cut it into squares and optionally garnish with soaked nuts ( i used shaved almonds soaked in warm water for 10 minutes) - bake in a preheated oven at 180 for 10-12 minutes then drop the heat to 150c for another 7-8 minutes. - let the tray cool for half an hour before serving. Have one or maximum 2 pieces a day( some people dont like the consumption of black seeds) and enjoy
