@thebuttababe: 🥔🧈 Creamy Mashed Potatoes Ingredients 2 lbs. Yukon or Russet potatoes cubed 1 c.Whole milk 2 c.Half and half 1 stick of butter unsalted melted Salt Pepper Garlic powder Black pepper Wash and chop your potatoes into cubes. Into a large stock pan, add in your whole milk and half and half. Add your potatoes and let simmer for about 20 minutes until they are forked tender. You need to make sure to keep them at a very low simmer so that the cream does not boil over. Make sure that you continue to stir your potatoes so that they don't stick to the bottom of the pan. Once your potatoes are fork tender, strain them off and keep some of the cream. To a separate Bowl add 3/4 a cup of reserved cream and start ricing your potatoes into the cream. Make sure to remove the skin from the ricer before you add more potatoes in. As your potatoes start to thicken, add more cream as well as butter finish ricing and stirring everything together. Season at the end. Once you've done your cream and butter. Add in kosher salt and other seasonings. Enjoy! Note: If you make these ahead of time, keep some of that cream so that you can reheat your potatoes by adding a little bit more cream.
