On another baking sheet, add shredded brussels and red onion. Toss with olive oil, salt, pepper & garlic powder. Transfer both baking sheets to the oven and bake for about 15 minutes, flipping the sweet potato halfway and spraying +salting the other side. While those are roasting, bring a large pan to medium heat. Add chicken sausage, break into small pieces with a spatula and cook until done through. Once sweet potatoes are done cooking, reduce oven heat to 400F and push the rounds closer together on the baking sheet. Top with some of the cheese, the cooked chicken sausage, roasted brussels + onion, and the remaining cheese. Transfer back to the oven to bake until the cheese has melted (about 5-8 minutes).
