THE JUICIEST ROASTED CHICKEN🐔🍗🦃 I have single-handedly been in charge of my families Thanksgiving dinner for the past 15 years, so trust me when I tell you, this is the best way to make a juicy bird! This recipe works great for turkeys too, but if you’re cooking for a smaller crowd this holiday season and still want all of the flavor, try roasting a chicken instead!  The secret is a dry brine, which is a mix of salt and herbs. It creates the crispiest skin with the juiciest meat. The salt pulls the moisture through the fibers of the meat, allowing for max flavor and tenderness.  Ingredients~ - Whole chicken (mine was 5lbs.)  - 1 head of celery  - 7 large carrots  - 5 medium yellow or russet potatoes  - 1 large onion - 1 lemon - Fresh herbs ( I used sage, rosemary, thyme, and a bay leaf)  - 1/2 stick unsalted butter - 1/4 cup kosher salt  - 1 cup of dry white wine  Directions~  The night before, create your dry brine using your salt and chopped herbs. Place your chicken on an elevated roasting dish, then remove the giblets, and pat dry your bird.  Leave your bird uncovered in the refrigerator overnight. The air will dry out the skin and create that crispy texture we all love. The next day, pull your chicken out of the refrigerator one hour before cooking to allow it to come to room temperature. Prepare all of your produce and line it in the bottom of your roasting dish to create an elevated surface.  For roasting you want to ensure that there is proper airflow, or else steaming will occur, and this technique using your vegetables is the perfect hack in case you don’t have a roasting pan! Create your compound butter using chopped rosemary and then lather it generously over your entire chicken, making sure to get inside and under the skin as well.  Fill the cavity of your bird with your aromatic herbs, lemon, onion, celery, and carrots. Roast at 425°F until the internal temperature reaches 165°F-175°F. Add  1 cup of dry white wine halfway through cooking, occasionally basting your bird with the cooking liquids. Allow your chicken to rest undisturbed for 10 to 15 minutes before slicing into.
