Place all ingredients in a blender and blend until smooth and well combined. 2. Heat a large nonstick skillet or griddle over medium-low heat and lightly coat with butter, ghee, or coconut oil. 3. Pour batter onto the skillet using about ¼ cup per pancake. Add any desired toppings like chocolate chips or berries on top before flipping. 4. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook another 2 minutes or until golden brown on the underside. 5. Repeat with remaining batter. Makes 3–4 pancakes. Storage Tip: Store any unused batter in an airtight container in the fridge for up to 2 days.
