will be thinking about this cauliflower bruschetta chicken nonstop until i make it again 🍅 easy, gluten free & so cozy! RECIPE (gluten free): olive oil -1/2 head cauliflower, cut into 3 thick slices -3 boneless skinless chicken breasts (about 1.5 lbs, pounded down if they’re really thick!) -1 tsp italian seasoning -1 tsp garlic powder -1 tsp onion powder -salt + pepper to taste -red pepper flakes to taste -fresh mozarella (6-8 slices) for the bruschetta: -3 roma tomatoes, diced -1/4 cup chopped basil leaves -2 small garlic cloves, minced -2 tbsp olive oil -salt + pepper -balsamic glaze preheat oven to 425F. brush each side of the cauliflower with oil & season with salt and pepper. roast for 10 minutes. meanwhile, mix together spices in a small bowl. brush a bit of oil on both sides of the chicken breasts & then sprinkle the seasonings. rub in. remove cauliflower from oven and add one chicken breast to each cauliflower steak. top with mozzarella. bake until the chicken is cooked through & cheese is melty + golden — i recommend starting to check it at 25 minutes as the time will vary based on the size/thickness of your chicken. meanwhile, mix together all bruschetta ingredients in a medium bowl. once the chicken is done, top with the bruschetta mixture and a generous drizzle of balsamic glaze. enjoy! #bruschettarecipe #bruschettachicken #cauliflowerrecipes #chickenrecipes #easyandhealthy #weeknightdinner #healthydinnerideas #glutenfreerecipes #lowcarbrecipes #EasyRecipes
