Heat half of the cream, dissolve the gelatin in it, then emulsify with the chocolate. Add the rest of the cream and the orange juice, mix well and let rest in the fridge for 12 hours. Orange Marmalade Insert: • Heat water and orange juice, add sugar and agar-agar, boil for 2 minutes, then cool in the fridge. Mix without incorporating air, add the chopped candied oranges, place in molds and freeze for 1 hour. Crispy Glaze: • Melt the cocoa butter, emulsify with the white chocolate, add the dye, let it rest, and use at 25 degrees Celsius.
