Penne alla vodka for the win 😮‍💨 recipe below!!  Ingredients:  -1lb penne pasta  -1tbsp neutral oil  -1 large diced shallot (~1/3cup)  -6 garlic cloves sliced  -1 diced red Fresno pepper (they can be pretty spicy so I removed some of the seeds but you can leave them)  -2-3oz of vodka (I just eyeballed it)  -1tbsp tomato paste  -20oz of crushed tomatoes  -handful of basil   -1/2tbsp red chili flakes  -2/3cup heavy cream  -1/2cup grated parmesan  -salt and pepper to taste  -grilled chicken (seasoned w/ Italian, salt, pepper)  **option: top with grilled chicken, ricotta, parm and basil.  Recipe:  -heat a large sauce pan on med heat. Add oil and shallots. Cook for a couple minutes then add the garlic and peppers. Continue to cook until the garlic is fragrant.  -Add vodka. If you want to flambé, remove the pan from the heat and light the vodka on fire. Keep moving until the flame is out. OR you can cook the vodka until it’s all gone.  -add the tomato paste and stir. Then add the can of tomatoes (I removed 1cup from a 28oz can). Add basil and simmer for 15min until sauce is thickened and basil is welted. Add salt and pepper (taste to adjust).  -add sauce to blender/food processor/immersion blender until smooth (@cuisinart, I love you).  -add sauce back to the pan and slowly add the cream. Mix in the parmesan. Taste and add whatever else you want (I added red chili flakes for more of a kick). -Let simmer. Add pasta, you can use some pasta water to thin it out!  -grill seasoned chicken on medium-high heat in a cast iron 4-7min each side until fully cooked.  -ENJOYYY
