This creamy bacon pasta is my new favorite way to use up leftovers! I took the mint pea purée from my Sunday roast and transformed it into a rich, flavorful sauce that pairs perfectly with crispy bacon, capers, and anchovies. The white wine adds a nice acidity, while the Parmesan and cream make it super luscious. The result is a vibrant, comforting dish with a hint of freshness from the mint and peas. Finished with black pepper and extra crispy bacon for garnish, this pasta is a must-try! Ingredients: 	•	200g spaghetti 	•	150g bacon, chopped 	•	2 tbsp mint pea purée 	•	10-15 capers 	•	2 anchovy fillets 	•	¼ cup olive oil 	•	1 cup white wine 	•	¼ cup cream 	•	¼ cup grated Parmesan 	•	1 tbsp freshly ground black pepper 	•	Extra bacon for garnish Recipe: 	1.	Cook the spaghetti in salted water according to the package instructions. Drain and set aside. 	2.	In a pan, fry the chopped bacon until crispy. Set the bacon aside, leaving the bacon fat in the pan. 	3.	Add the olive oil to the same pan, then toss in the capers and anchovy fillets. Cook for a minute, breaking up the anchovies as they dissolve into the oil. 	4.	Deglaze the pan with the white wine, scraping up any browned bits, and let it simmer for a couple of minutes until reduced. 	5.	Stir in the mint pea purée and cook it for 1-2 minutes to meld the flavors. 	6.	Add the cream and let it warm through, stirring to combine. 	7.	Toss the cooked spaghetti, crispy bacon, and Parmesan into the sauce, mixing well until everything is coated. 	8.	Add the black pepper and give it a final toss to incorporate. 	9.	Plate the pasta and garnish with extra bacon.
