Sharing this nostalgic potato & meatball stew recipe with all of you 🍲❤️ 3 medium russet potatoes 9 pork balls Half red onion, sliced 2 cloves of garlic, minced 1 stalk of spring onion 2 eggs for sunny side-up (optional) 1/2 tbsp oyster sauce 1 tbsp light soy sauce 1/2 tbsp dark soy sauce 1/2 tsp sesame oil 1/2 - 1 cup water (adjust accordingly) Cornstarch slurry (1 tbsp corn starch, 2 tbsp water) Pork balls (form about 9 balls): - 280-300g minced pork - 1 tsp corn starch - 1 tsp dark soy sauce - 1 tsp light soy sauce - Dash of white pepper 1. Wash and peel the potatoes before slicing thinly. Rinse the potato slices in cold water twice to get rid of the excess starch. Dry with paper towels, make sure they’re completely dry before frying.  2. In a mixing bowl, mix the minced pork and seasoning together. Form into balls and set aside.  3. Prepare a pan or wok to pan fry the potato slices. You can either deep fry for crispier potatoes or pan fry for more convenience. Set side once they’re slightly golden.  4. Pan fry the meat balls. This should take about 2-3 minutes on each side. Once those are cooked, set that side.  5. In the same pan, add in the onions and minced garlic. Stir fry until the onions are slightly translucent then add in the potatoes and meatballs.  6. Add in the rest of the seasoning and water except for the cornstarch slurry. Mix well, cover and let that simmer.  7. When the potatoes are fork tender, stir in the cornstarch slurry until the mixture thickens and reach your desired consistency.  8. Serve over a hot plate of rice and garnish with the spring onions. For an extra bonus, top it off with a sunny side-up. 💥 #sgfoodie #easyrecipe
