Always the day before . Make your own stock from last years carcass. Save the drippings from this years and freeze it. You can then scrape off all the fat. I make 2 gallons of gravy the night before.

The week before roast some turkey wings and add to turkey broth with onion, celery, parsley and white wine. Simmer, strain and freeze. Heat up and then add to the butter roux on Thanksgiving. 🥰🥰🥰
