@stevenmotocooks: another not so random culinary technique, breaking down fish! just one of so many different ways you can approach fileting a fish (in this case round fish), but this is just how I learned and I think it is pretty simple and easy. butchery is a lot of the time just being confident handling whatever protein or animal that you are breaking down so the first few are definitely not going to be perfect and that is 100% normal. would be easier to fillet the fish if u left the head and tail on. just make a slice from the head down then just do ur other steps to fillet it and just trim off any excess
