Add the pumpkin puree and vanilla extract. 4. Mix in the dry ingredients until there are no visible streaks of dry flour. Finish with the chocolate chips. 5. Divide the dough into cookies, each about the size of 3 tablespoons or weighing 60g. For the quickest and easiest portioning, use a #20 size scoop. 6. Arrange 8-10 cookies on each half sheet pan. 7. Bake for 13 to 15 minutes or until the edge just begins to offer some resistance when pressed. 8.
