Layered apple baked oats 😮‍💨 I posted this recipe on my story and was overwhelmed by the response. And so, here it is 👇🏼 Ingredients:
1 large apple (sweet) or 2 small
2 cup (200g) rolled oats
1/4 cup OR ~35g vanilla plant protein powder
OR 1/4 cup (30g) wholemeal plain flour/ flour of choice* + 1/2 tsp vanilla essence
1 tsp cinnamon
1/4 tsp nutmeg (optional)
1/2 tsp baking powder 1-2 tbsp honey/maple/alt (optional, depending on preference)
2 cups (~450-500mL) milk of choice
1/3 cup (30g) sliced almonds

*an alternative to protein powder, although I must admit, I personally preferred this recip, taste wise, with the addition of the vanilla protein powder. Please refer to note at the end for alt ways to increase protein intake instead.
To serve (optional):
yoghurt (YoPRO, chobani, or Greek as examples)
+/- additional fruit/ berries of choice

Method:
1. Heat oven to 180 degrees Celsius (~350 degrees Fahrenheit).

2. In a greased oven safe container/baking tray (15-20x15-20), combine the oats, protein powder/flour, spices, baking powder, honey/maple/alt, and milk, mixing until combined. 3.Add the finely sliced apples (using a grater with slicer for convenience OR sliced by hand), and press these down until completely covered by the mixture. Top with sliced almonds.
4. Place in the oven and cook for about ~40-45 minutes, or until golden and firm to touch.

5. Upon serving, cut into ~4 slices*. If serving warm the next day - reheat a slice in the microwave for ~1 minute and serve with a dollop/s of yoghurt of choice +/- additional fruit (optional), or serve as is/cold. Store in refrigerator/ freezer is also an option for a longer keep time.
*Individual portion sizes will vary. If opting for the no protein powder option, serve with an additional tub yoghurt (i.e. - 1 x yoPRO or chobani fit, etc. per serve/slice), to ensure a similar protein serve to option A. You may wish to double/triple/quadruple this recipe to yield a higher serving if you wish.
