Ingredients for 2: 🍠1 sweet potato (around 350g) 🍠1 egg 🍠4 tbsp cornstarch 🍠30g grated emmental cheese 🧀 aioli / garlic mayo Steps : 1. Preheat the oven to 200°Celsius 2. Peel the sweet potato and then grate it 3. Press the grated sweet potato over a bowl with your hands or with a towel to remove as much water as possible. 4. In a bowl, add the grated sweet potato, egg, cornflour, grated emmental, salt, pepper and paprika to taste and mix. 5. On a baking tray lined with baking paper, form the fritters (I made 6 of them). 6. Bake in the oven for 30 minutes, flipping them over after 15’. 7. Serve with aioli or garlic mayo! What’s for dinner tonight? Carbonara di zucchine 🍝 inspo : @The Pasta Queen 🥰 Ingredients for 2: ✨250g pasta ✨3 egg yolks, 1 egg ✨1 zucchini ✨70g pecorino romano ✨5 tbsp olive oil Steps : 1. Cut your zucchini in thin cubes and fry it on a pan with 5 tbsp of olive oil, for about 15’ on medium heat 2. Cook your pasta and towards the end of the cooking, save 3 tbsp of pasta water 3. In a bowl, mix the egg yolks and egg with the pecorino cheese, adding salt and pepper to taste. When the zucchini is almost done cooking, add a tbsp of olive oil from the pan to the bowl and mix (this will help with the consistency of your carbonara) 4. Sift the pasta and add it to the zucchini, mixing for 2’ on low heat, then add the egg and pecorino mix, mix again and finally add the pasta water to create the perfect creamy sauce. If necessary, add some more salt and pepper and serve on a plate, topping with zucchini, and now you know #whatsfordinner #easydinnerideas #pasta #carbonara

Ingredients: ✨250g pearled couscous ✨a handful of spinach, 2 cloves of garlic ✨1/2 broccoli, 4 basil leaves and parsley ✨30g feta cheese ✨optional: pomegranate seeds Steps: 1. Cook your broccoli in boiling water for 7’ 2. Wash your spinach clean, in a pan, add a tbsp of olive oil, the thinly sliced garlic and then add your spinach, cook for 4’ 3. Cook your pearled couscous in boiling water for 9’ (can also be quinoa or brown rice of course) 4. In a blender, add your sifted broccoli, spinach and garlic, basil leaves, parsley and feta. Add salt and pepper to your taste. Blend until you get a nice green sauce. 5. When your pearled couscous is cooked, mix it with your green sauce and serve on a plate.
