There’s nothing like the first piece of bread dipped in a zesty extra virgin olive oil at a restaurant (I could literally eat it ever day)! For pizza week, I wanted to turn the oil into one that had the the essence of a pizza, & one you could drizzle on your pizza, dip your crust, or just serve as an appetizer with fresh focaccia. To make it even more extra, the oil is poured over creamy burrata & finished with aged balsamic. This would even be great for a Memorial Day appetizer! Ingredients -1C extra virgin olive oil -1 clove garlic, grated/minced -3T fresh basil -2T fresh oregano -3T fresh italian parsley -1/2-3/4C parm, grated (or more) -2-3t red pepper flakes -pinch salt -burrata -aged balsamic -focaccia or pizza Recipe 1.Chop herbs super finely. Mix oil, herbs, pepper flakes, cheese, oil, salt. You almost want it to look like an oil paste. Let sit for 30 min. 2.Place burrata on center of shallow bowl or plate with rim. Mix or stir oil very well so the herbs come together - it probably separated while it was resting. 3.Break open burrata & spread out a bit. Drizzle balsamic on burrata. Serve with fresh bread!
