WELCOME TO MEDITERRANEAN MADNESS 🍋☀️ my brand new summer series where I’ll be showing you how to make some of the best dishes the Mediterranean has to offer this is part 9 and today were taking a trip to Lebanon to make some Falafel 🇱🇧! (20) Falafel: 150g dried chickpeas soaked overnight 1/2 red onion 5 cloves of garlic 100g fresh parsley 1 tbsp coriander seeds 2 tbsp cumin seeds 2 tbsp black peppercorns Salt to taste 1 tbsp smoked paprika 1 tbsp sweet paprika 1 tsp ground aleppo pepper (optional) 1/2 tsp baking powder 1 tbsp flour 1 litre frying oil Tahini sauce: 150ml tahini 2 garlic cloves minced 25g freshly parsley chopped 100ml water approx* Salt & pepper to taste To serve: Flatbreads Salad Pickles Pomegranate molasses (1) To make the falafel mixture, add the chickpeas to a food processor and pulse until combined, then add the onion, garlic and parsley. Toast and grind your whole spices, then mix with the paprika, and aleppo pepper. Add to the falafel mixture and mix very well alongside the baking powder and flour. Taste and season salt to taste. Place in fridge for 15 minutes (2) In the meantime, make your tahini sauce by combing all the ingredients except the water in a large bowl and mix well. Slowly whisk in the water until you reach a smooth silky consistency, then set aside. (3) Now heat up your oil to 180C and fry your falafel in batches until golden and crispy. Serve inside some flatbreads, pickles, salad, tahini sauce and pomegranate molasses, enjoy ! #falafel #lebanon #lebanesefood #middleeasternfood #mediterraneanfood #fyp
