Low heat for everything and let your cream sit out for a bit so it comes up to almost room temp, so it doesn’t split or curdle from going from cold to hot so fast

Low heat!!! It’s easier than people are making it out to be. Just take your time, whisk in the flour on low heat and make sure you let that cool for 2-3 minutes before adding the evaporated milk!
