Today’s kitchen: M&M Cheesecake (no bake) | Full of colorful M&M’s, worthy of any celebration ❤️ COOKIE DOUGH ▫️125 gr tea biscuits ▫️100 gr unsalted butter CHEESECAKE ▫️200 gr cream cheese ▫️3 tbsp sugar ▫️24 gr whipping cream stabilizer (3 tbsp) ▫️8 gr vanilla sugar (1 tbsp) ▫️425 ml heavy cream ▫️100 gr chopped M&M’s GANACHE ▫️75 ml heavy cream ▫️100 gr milk chocolate GARNISH ▫️50 gr M&M’s ▫️whipped cream Put the cookies in a food processor and pulse until finely ground. Transfer the finely ground cookies to a large bowl and add the melted unsalted butter. Mix them together until a cookie dough forms. Press the cookie dough firmly into the bottom of a baking pan. Place it in the refrigerator. Chop the M&M’s into small pieces. In a large bowl, mix the cream cheese, granulated sugar, whipping cream stabilizer, and vanilla sugar until combined. Gradually add and mix in the heavy cream (425 ml) until stiff peaks form. Fold in the chopped M&M’s. If you have any whipped cream left over, keep it in a piping bag for garnish. Spread the M&M mixture evenly over the cookie dough in the baking pan. Cover and refrigerate for an hour. In a saucepan, heat the heavy cream (75 ml) until just before boiling. Remove from the heat and add the chopped milk chocolate (100 gr). Let it sit for a minute. After a minute, stir the mixture until smooth. Pour the cooled chocolate ganache over the M&M cheesecake. Cover the cheesecake and refrigerate overnight. If you're in a hurry, you can freeze it for a few hours.
