Hope you’ll enjoy this and give it a go ❤️  Recipe: serve 8-12  •32 cup water 💦or 2 gallon  •5-6 lbs beef ribs (more if prefer) •2-3 lbs thinly sliced beef tri tips (for rare steak) •1 pk beef meatballs with tendon (Great Wall brand)  •1-2 piece of ginger (lightly smashed) •3-4 big shallots or 2 big onion  I’m using a cooling rack to help me char the shallots and ginger on the stove.  •1 pk pho herbs and spices Any brand, make sure to buy the packet with the cloth bag. If you want a stronger flavor. Pick one with more star anise.  •3 tablespoon salt  •3 oz rock sugar  •1 tablespoon msg •1/2 tablespoon fish sauce (3 crabs 🦀. Too much fish sauce will make your broth go sour)  •Char the ginger and shallots. Doesn’t have to be totally char. Set aside  •Toast the pho seasoning in a pan for about 2-3 minutes on medium. Put spices inside a cloth bag and tie it tightly.  •Parboiled beef ribs with 1 tablespoon of salt. Bring to a boil and continue cooking for 6-8 minutes. Remove, clean and rinse. Throw away the water and start cooking with clean one.  1•In a big pot add 2 gallon of water 💦. Bring to a full boil then add parboiled ribs, salt shallots or onion, ginger and pho seasoning cloth bag. Hang it on the handle of the pot.  2•Bring to a full boil. Then simmer on low for 1 hours with cover.  3•After 1 hr. remove pho spices and onion. Scoop out some of the fat on top. Use a fine strainer to filter out the impurities. Leave ginger in to get more flavor out.  4•Continue to simmer on low with cover for another 2 hours or until ribs are tender.  5•Add more salt, msg, rock sugar and fish sauce. Let to cook until sugar dissolved(5-6 minutes).
