Preheat the oven to 200°C (390°F). 2. Clean the lamb rack: Rinse the lamb under cold water and pat dry with paper towels. Trim off any excess fat and silver skin. French the bones by scraping them clean with a knife for a more elegant presentation. 3. Prepare the crumb: In a food processor, combine parsley, mint, Parmesan, panko, rosemary, macadamia nuts, lemon zest, and a pinch of salt and pepper. Pulse until combined but still textured. Drizzle in 2 tablespoons of olive oil to bind the mixture. 4. Cover the bones with small pieces of aluminum foil to prevent them from burning. 5. Season the lamb rack with salt and pepper. Heat a skillet with a bit of olive oil and sear the lamb on all sides until golden brown. 6. Remove the lamb from the skillet and let it cool slightly.
