@jujumaoo: Welcome to your new favorite spot! I just stopped by ANKO’s new storefront in Glorietta 2, and trust me, I was surprised at the total range of products they had. Everything from the functional kitchenware and modernly designed dinnerware seen on the video, as well as pet products, electronics, and home furniture! I have no complaints and everything was a steal to get! So to put these products to the test I decided to make something simple and easy you can recreate at home! Tortilla de Talong! INGREDIENTS: Tortilla de Talong 4 potatoes, peeled and sliced 2 white onion, sliced 7 eggs beaten salt & pepper to taste 3 medium sized eggplants, squashed Oil for frying Garnish: Banana ketchup Spring onions INSTRUCTIONS: Start by chopping down all your ingredients. Peel and slice the potato and slice thinly. Slice the onions the same way. Toast your eggplants over an open flame, and remove the skin. Place in a bowl, and start squashing the eggplants until it resembles a paste. Combine everything into a bowl, and mix in your eggs while seasoning. Fry on a pan, and flip over once one side is cooked to desired doneness. Place on a plate, and add banana ketchup and spring onions. Serve and enjoy! #MyAnko #AnkoPH
