@jessthomofit: A really easy and delicious low calorie, high protein dinner! Serves 4: 400g roast chicken breast (cooked weight) 200g orzo (dry weight) 200g light soft cheese 1 stock cube (in 700ml boiling water) 80g sundried tomatoes or sundried tomato paste 30g parmesan 60g light cheddar 12g fresh basil 1 onion 4 garlic cloves 2g oil (I used the oil from the sundried tomatoes jar!) 1. Heat the oil in a frying pan over a medium heat, then add your inion and garlic and saute until soft. 2. Add your stock cube to boiling water, then mix in your soft cheese once the stock cube has dissolved. Then pop in the microwave until almost boiling! 3. If using whole sundried tomatoes, blitz into a paste before adding to the dish 4. Add everything to the baking dish except the cheddar cheese, mix well and cook at 200C for 20 minutes. 5. After 20 minutes, stir well and top with the cheese then put it back in the oven for another 20 minutes. 6. Finally made this tonight! It’s in the oven ❤️Found that you can make the whole thing in the dutch oven. fry the onions and garlic in there and stick it in to roast!
