I use 200ml baileys and a can of condense milk 280 g self raising flour then 2 teaspoons of mixed spice 1 kilo of dried fruit and viola Xmas cake delicious

half way through cooking you need to cover in foil and then it won't burn because 180c for 2 hours is long and hot
