I think they just instinctually want to do their business in dirt/sand so they can bury it to hide their scent. And a litter box just mimics that for them.

no literally my cat was a stray and i didn't even have a litter box for him when i first brought him inside and i told him to do his business on a towel and HE DID AND FOLDED IT UP incredibly smart

They’re born with an instinct to bury. With tiny baby kittens you demonstrate that the litter box is for digging and they figure it out

when I got my cat I put her in the litter box to show her and after she didn't use it all day I put her in and showed her you can dig in it she then went crazy digging for 10 minutes and was set

because they'd normally use the bathroom in the dirt so they just have this instinct that tells them to use the bath room in the dirt sense they can cover it

they just like that specific texture, if you had a sand box or a sandy planter they'd use that too
