BROWN BUTTER SOUR — • ¾ oz sage syrup • 1 oz lemon juice • 2 oz brown butter & sage fat washed gin • 1 egg white • garnish: sage sprig Add all ingredients into a cocktail shaker and shake without ice to emulsify the egg white. Add ice and shake again. Double strain into a coupe glass and garnish with a sage sprig. BROWN BUTTER & SAGE FAT WASHED GIN — • 2-3 tbsp unsalted butter • 8 sage leaves • 2½ cups gin Melt the butter in a small saucepan on medium low heat until it becomes foamy. Once you get to this step, add the sage, and continue to cook until butter becomes a nice brown. Remove from heat, let it cool a little bit, and add it to a jar with gin. Give it a shake and stick it in the freezer. Once it’s solidified, strain out the gin in a damp coffee filter lined sieve. Store in the refrigerator. SAGE SYRUP — • 1 cup cane sugar • 1 cup water • 10 sage leaves Add all ingredients into a small sauce pot and allow sugar to dissolve. Let it cool completely and strain into a jar.
