For pastry suggestions, visit link in bio 🔝or visit https://www.denisem.ca/recipes#Pastry Filling 7 cups sliced ripe nectarines (about 9) ½ cup granulated sugar 1 tsp freshly grated ginger, optional 1/4 cup quick-cooking tapioca, ideally ground in a spice grinder Crumble ½ cup unsalted butter, chilled and cut into ½ inch pieces ½ cup large flake oats 1 cup whole wheat flour ½ cup firmly packed light brown sugar ¼ tsp kosher salt Pastry: Line a 7” x 11” tart pan with removable bottom or a 9” pie plate with your favourite pastry dough. Chill, add parchment and pie weights and blind bake (pre-bake). Filling: Combine sliced nectarines, sugar, ginger (if using) and tapioca. Set aside to soften15 minutes. Crumble: combine the butter, oats, flour, golden brown sugar and salt. Mix together with a fork, or hands, until the mixture comes together in clumps. Putting it all together: Pour the softened nectarines in the pre-baked, cooled, pie shell, add the crumble topping and bake in a preheated 425°F oven 20 minutes. Reduce the heat to 375°F and continue baking another 25-30 minutes until the crumble is golden and the fruit bubbling. Enjoy 👩‍🍳
