INGREDIENTS - 100g salted butter - 375g white marshmallows - 1 teaspoon vanilla extract - 10 cups popcorn (just under 1/2 cup kernels) - 1/2 cup roughly chopped pretzels - 1/2 cup roasted nuts, chopped (I used almonds) - 1/2 cup desiccated coconut - 1 x 275g bag Darrell Lea Christmas Liquorice, cut into thirds - 2 x 160g bags Darrell Lea Christmas Crunchy Chocolate Balls - Gold star sprinkles METHOD 1. Grease a bundt pan thoroughly with melted butter. Sprinkle gold star sprinkles over the base of the pan and set aside. 2. Add the popcorn, pretzels, roasted nuts, coconut, chopped Darrell Lea Christmas Liquorice, and Christmas Crunchy Chocolate Balls into a large mixing bowl. Stir to combine. 3. Add the butter, marshmallows, and vanilla extract to a saucepan. Stir continuously over medium heat until the mixture is melted and smooth. 4. Pour the melted marshmallow mixture over the bowl of popcorn and stir everything together until all of the ingredients are well coated. 5. Transfer the mixture into your greased bundt pan and use a piece of baking paper to press it down. Let sit for around 10 minutes to cool completely. 6. Once cooled, invert your Christmas Popcorn Cake onto a plate.
