@giallolovesitaly: Second episode of the most saucy and delish series you've ever seen! Sugo! Episode 2: Spaghetti allo Scarpariello 🍝 from Napoli with love! @mattiastable Ingredients (for 1 person): Spaghetti 130g Cherry tomatoes 250g Pecorino Romano 20g Parmigiano Reggiano 20g Basil 1 fresh chili pepper Extra virgin olive oil 1 garlic clove (peeled) Salt Procedure: Finely chop the chili, peel the garlic and wash and halve the cherry tomatoes. Place those in a pan with olive oil on medium heat. Once the garlic starts getting a bit of colour (3-4 minutes) add the cherry tomatoes and cover with a lid - let this cook for about 10 minutes. In some boiling salted water, cook the spaghetti a minute or two al dente. Add a ladleful of pasta water to the cherry tomatoes in the pan, alongside basil and salt - and remove the garlic clove. Move the cooked pasta to the pan as well and finish the cooking process in the pan, tossing it to get saucy. Remove from the heat and grate in the Parmigiano and pecorino Romano (do this bit by bit, as you don’t want the cheese to get stringy).
