30 days of high protein meals zucchini and cottage cheese frittata today’s is a good pre prep grab and go breakfast that you can easily freeze and just microwave in the morning. YOu can load this with whatever veg you have left over too, it’s great to get rid of anything in the fridge. Add bacon or extra cheese if you want. This isn’t as high as the other recipes but it’s a great quick protein option for our savoury breakfast lovers. this makes 12 and per serve the macros are Carbs 12.5g Protein 15g Fats 3.8g for the filling 2 tsp of EVOO 1 onion finely chopped 1 capsicum finely chopped 150g of spinach salt to taste add the oil, onions and capsicum into a pan on medium heat and cook for 5 minutes until softened. add spinach and season. Cook for a further 2-3 minutes then set aside. Zucchini 1kg zucchini grate the zucchini and squeeze out as much liquid as possible or the frittata will be wet. egg mix 5 extra large eggs 10 extra large egg whites or 350ml egg whites 300g low fat high protein cottage cheese 40g tasty cheese 2 tbsp italian seasoning 2 tsp garlic powder 1 tsp salt 2 tsp smoked paprika 1 cup self raising flour blitz the ingredients above add the onion mixture and the zucchini well pour into a lined baking tray bake at 180C for 35 - 45mins depending on depth of tray. leave to cool and slice into 12. freeze some and enjoy #30daysofhighprotein
