Mushroom Eggplant Turnovers 🍆🧄🍄🌿 Filling 1 medium eggplant vegetable oil, about ¼ cup Kosher salt 1 cup finely chopped onion 1 lb button mushrooms, cleaned and finely chopped 1 Tbsp minced garlic 1 tsp crushed dried chili peppers 1 tsp finely chopped fresh thyme 1/4 cup finely chopped parsley Zest from 1 lemon 2 Tbsp freshly squeezed lemon juice 1/4 cup freshly grated Parmesan cheese 1/4 cup chopped nuts Cut eggplant lengthwise, score, brush with oil, bake @ 375 F untl tender. Scoop out the flesh and chop. Heat oil in a large skillet, add onions, 1/2 tsp salt and cook until starting to brown. Add mushrooms in batches and cook until soft. Add the garlic and cook until aromatic, about 20 seconds. Transfer to a bowl. Add the dried chili peppers, herbs, lemon zest and juice, ½ tsp salt, Parmesan and nuts. Mix well and taste. Season with additional salt if needed. Cool completely before using.
