Acorn Jelly (Dotorimuk) is a popular Korean side dish that’s healthy, gluten-free, and vegan. You can make it from scratch using acorn starch powder, which you can find at Korean markets or online. Alternatively, you can buy pre-made acorn jelly at Korean markets. To serve, keep it simple by drizzling the seasoning on top or make a salad (muchim) with cucumber, carrots, and greens. Korean Acorn Jelly (Dotorimuk)  1/2 cup acorn starch  3 cups water 1/2 teaspoon salt Optional: 1/2 Tablespoon sesame oil  Garnish: green onion and/or sesame seeds Seasoning ( adjust to taste)  2 Tablespoons soy sauce 1 Tablespoon sesame oil  1 Tablespoon vinegar (rice, white or apple cider)   1 Tablespoon sweetener  1-2 garlic cloves, minced  Optional: 1/2-1 Tablespoon gochugaru (Korean red pepper flakes) Optional: 1 green onion, sliced  Optional: 1-2 chili peppers  Optional: 2 Tablespoons onion, diced  For Salad:  1/2-1  carrot, grated or sliced  1-2 Persian cucumbers, sliced   3-4 perilla leaves, sliced (or any greens)  Directions 
Add the acorn starch to a saucepan. Gradually add water while whisking to prevent lumps. Cook until the mixture thickens, while stirring in one direction (this prevents air pockets). Reduce the heat to low once it starts to boil. Add salt and sesame oil and continue cooking, while stirring, until thick. If the mixture starts to stick to the bottom of the pan, reduce the heat. (It will take about 10 minutes in total.)  Transfer the acorn jelly to a square or rectangular container and smooth the top. Cover with plastic wrap on the surface to prevent drying. Let it cool for at least 4 hours, up to overnight in the fridge.  To loosen the jelly, tilt the container to one side while gently pulling down the jelly with your other hand until it comes away from the side. Repeat this process for all four sides. Place a plate over the container and turn it over. Transfer the jelly to a cutting board and slice it into square or rectangular shapes. Serve the jelly in a serving dish and drizzle the seasoning over the top. Alternatively, you can make a salad by gently tossing the jelly with vegetables and seasoning in a bowl.
