We cut off the side rind and slice thin matchsticks, which can be fanned across your board to create a cheese river, and can build some height! Manchego & Other Aged Goat/Sheep Milk Cheeses: A piece of Manchego will always come in a triangular wedge, which lets you to easily slice it into small triangles. Fan out or river the triangles, or balance them on their side, switching the direction of the triangle each piece for a unique textural element. Small form softies: Depending on the size of the piece (and the size of your board), cut softies in halves or quarters, and fan across your board. Always place a small knife near these cheeses on the board for spreading! Aged Cheddars + Goudas: These firm cheeses love to be crumbled. Use a knife to score the surface of the cheese, then begin to break apart at the score lines with your hands. This will give you equally sized pieces, while also maintaining that organic edge. Blues: Score your wedge on a diagonal and break it apart with your hands to create an organic edge, which serves as an eye-catching centerpiece. The bottom line: there’s no right way to make a cheeseboard! Play around, have fun!
