@simply.unconventional: Animal fats are the most stable fat, and therefore the best and healthiest fat to cook with. Animal fats are rich in nutrients, stable at high heat, and significantly less prone to oxidation (which can produce carcinogens). Plant oils (including olive oil!) get damaged and lose nutrients when you heat them. I like to use organic, cold-pressed olive oil raw for things like salad dressings, homemade mayo, and drizzling on top of cooked foods. I bake with avocado oil but I don’t sear, sauté or fry with it. One exception is coconut oil — which is more saturated and therefore more stable. So I DO cook with coconut oil occasionally when I want to add that coconut flavor! #justeatrealfood #animalfat #animalfoods #animalbaseddiet #nutrientdensity

My diet is 80% Animal fats trimmings, bone marrow ect. I ONLY cook in tallow or grass fed butter. I’m 50 and feel like I’m in my 20s

While they are more stable, it doesn’t mean they are without a downside. Research has shown that excessive saturated fat intake increases risk for cardiovascular disease and type 2 diabetes.
