Chicken seasoning   1. 1 egg  2. 2 tbs Garlic Powder  3. 1.5 tbs garam masala  4. 1.5 tbs of coriander powder  5. 1 tbs of Kashmiri chili powder (paprika is fine too)  6. 1/2 tbs salt  7. 1/2 tbs pepper  First Coating  1. 1 c Cornstarch  2. 1/2c flour  Wet Coating  1. 1-2 C of club soda (start with 1 c and add more if needed)  2. 1/2 cup of Corn Starch  3. 1 C flour  4. 1 egg  5. 2 tbs Garlic Powder  6. 1.5 tbs garam masala  7. 1.5 tbs of coriander powder  8. 1 tbs of Kashmiri chili powder (paprika is fine too)  9. 1/2 tbs salt  10. 1/2 tbs pepper  Sauce  1. 4-5 tbsp of Mayo  2. 2 tbsp BBQ sauce  3. 1 tbsp of ketchup  4. Small drizzle of pickle juice  5. 3/4 tbsp of Ground Mustard  6. 1 tbsp of Garlic Powder  7. 1/2 tbsp of Worcester sauce  8. 1/2 tbsp garam masala  9. 1/4-1/2 tbsp Kashmiri chili powder (not really spicy. Substitute Paprika is fine)  10. 1/2 tbsp coriander  Directions:  1. Place the chicken breast into a food processor and add some salt. You can skip this step and just use some store bought ground chicken.  2. Next, mix in the first coating together.  3. Take small chicken nugget size pieces from the ground chicken and get the first coating all over it. Use some wet hands because it will get sticky. Place everything onto a baking tray or parchment paper.  4. Next, mix all the second coating together. You want runny batter type consistency. Use some more club soda or water if sauce is too thick.  5. Dip the flour/cornstarch coated nuggets into the second coating mixture and freeze the chicken nuggets for 1 hour.  6. In the meantime, make the sauce.  7. Double fry the chicken nuggets in 350 degree oil. First batch about 3-5 minutes or until golden. Second time is quick about 2 minutes. Don’t over fry.  8. Serve warm with the side of the sauce.  9. Enjoy!!
