COOKING EVERY FISH IN THE WORLD 🐟 🌍 Episode 89 (Part 2) - Cusk / Tusk • BIN: Brosme brosme FR: Brosme GER: Lumb ESP: Brosmio / bromillo IT: Brosme / brosmio IS: Keila NL: Lom • Ingredients (serves 5): 800g white fish fillet (skinless) Curry: 2 minced shallots 50g yellow curry paste 60g gochujang 70g white miso 100ml white wine 1 diced apple 1l coconut milk 1l dashi 300g chopped mushrooms Green beans Coriander • Recipe: 1. Fillet the fish as shown in this video. 2. Curry base: sweat down the shallots and add the curry spice mix. Deglaze with the wine, add the apple and coconut milk. Bring to a quick simmer and add the dashi and mushrooms. Gently reduce the curry until nice and smooth. 3. In a baking dish, place the fish fillets, top with green beans, sprinkle with chopped coriander and cover generously with the curry sauce. Bake in the oven at 180C for 10-15 minutes, depending on the fillet sizes.
