Baldurian seafood stew  Which is pretty much ciopinno  Ingredients: 1 lb clams (purged) 1 lb mussels (cleaned/de bearded) 1 lb shrimp (cleaned/deveined)  4 shallots 1 head garlic(12-15 cloves) 1/4 c tomato paste 1/4 cup red wine  1 can (28 oz) crushed or puréed tomatoes  16 oz clam juice 1 tbsp chili flakes 2 tbsp smoked paprika 10 sprigs thyme  Pinch of saffron (bloomed in warm water)  1 cup (8oz) English peas (fresh)  2 tbsp butter Salt to taste  To finish: Chopped parsley Sexy chives Directions: Purge and clean all seafood ahead of time.  Bloom saffron in warm water and reserve.  Preheat a large pot and add a few tablespoons of olive oil. Add the shallots and garlic and sweat (no color) over low heat for 4 minutes or until the onions are translucent. Turn up the heat to medium and add the butter. Once it’s melted add the tomato paste and sauté briefly until it’s brick red, around 3 minutes. Add the wine and cook until the tomato paste is almost dry again. Add the chili flakes, paprika and thyme, stir for 1 minute. Add the tomato and clam juice. Bring to a simmer, add in the saffron and allow it to simmer for 1 hour. Or until it no longer tastes watery. Remove thyme and Optional- blend with a stick blender.  Add the fresh peas. Cook for 5 minutes then add the shellfish. Cover and cook until all shellfish had opened. Add the shrimp and once more cover only for 2 minutes this time- or until the shrimp curls into a C shape. Taste now and adjust salt.
