This is how I make a lentil potato soup for an elderly parent and a lentil potato salad for the rest of the family. My partner is 84-year-old mom needs soft and low sodium food. But I don’t like to make her meals completely different from ours. Sometimes I make them almost identical and then sometimes I just use similar ingredients to make two separate meals. Our parent is happy to eat soup at every meal. But the rest of the family wants a bit more variety than that. So I often make soup and salad. If you care for a senior or an aging parent, then you know that cooking for their dietary restrictions while feeding the rest of the family can be very overwhelming. But it doesn’t have to be! I figured it out a couple of ways to really streamline the process so you can get delicious meals on the table relatively quickly. And actually have a variety all week long. My biggest trick is ingredient prepping. If you’re curious how we do this check out episodes one through five in this series. But basically I take an hour or two at the beginning of the week to prep ingredients that I can mix and match the rest of the week. This is how I use roasted chicken in two separate dishes.
