MAKE VANILLA SMB. combine egg whites and sugar and put bowl over a saucepan with simmering water. Whisk regularly until sugar dissolves and mixture is thin. 2. Then take out of saucepan and, using standmixer, whisk on high speed until stiff peak forms. Then add in soft butter  bit by bit, whisking well in between. Then add vanilla and salt. 3. MAKE CHOCOLATE SMB. microwave dark chocolate until melted, set aside to cool. 4. combine egg whites and sugar and put bowl over a saucepan with simmering water. MAKE MILK CHOCO GANACHE. warm double cream in microwave and pour over milk choco pieces. leave to sit for 5mins covered. Then stir and set aside to cool.  8. MAKE RED VELVET CUPCAKES. In bowl add in all wet ingredients (except milk) and sugar, and mix well. In cup mix warm milk and red food colouring paste, then add into wet ingredients mixture. In separate bowl, mix all dry ingredients. Then add dry ingredients mixture into wet ingredients mixture, mix until well combined. 9. MAKE CHOCO CUPCAKES. In bowl add in all wet ingredients and sugar, and mix well. In separate bowl, mix all dry ingredients. Then add dry ingredients mixture into wet ingredients mixture, mix until well combined. 10. Fill cupcake cases with batter (50g batter each), and bake at 180°C for 20mins. Let it cool. 11. ASSEMBLE CUPCAKES. Use apple corer and fill red velvet cupcakes with cream cheese, and fill choco cupcakes with ganache. 12. Use ice cream scoop to place vanilla SMB on red velvet cupcakes, and choco SMB on choco cupcakes. 13. Top red velvet cupcakes with cake crumbs and maraschino cherries . 14. Dust chocolate cupcakes with cocoa powder and cherries . Enjoy✨ Notes— •made the vanilla and choco SMB the day before assembling cupcakes, and kept at room temp. •for the red velvet cupcakes i went by eye on how much red colouring paste to put. I used ½tsp of “Sugarflair Velvet Red” paste. I’ll probs use 1tsp next time as i wanted it a bit more red than this.  •my milk choco ganache was a little loose as i didn’t get the ratio quite right here, but corrected this on the ingredients list.
