Who loves molo soup? 🍲 There’s nothing more comforting than this clean-tasting dumpling soup that was served all around Iloilo when we had our food crawl. 🥟 It’s quite easy to prepare at home for your family and friends, so try this local favorite today! 🙂‍↕️ MOLO SOUP  From the book: Flavors of Iloilo, Molo Town Iloilo Ingredients: Filling ¼ kg pork shoulder (kasim), ground ¼ cup tahure 3 cloves garlic, minced 1 pc egg ½ tsp pepper salt, to taste 2 tbsp chopped chives molo wrappers Chicken Stock ½ kg chicken 8 cups water 1 tbsp patis ¼ tsp salt 1 tsp pepper 10 pcs shrimp Garnish fried garlic chopped kutsay Procedure: For the dumplings: 1. Mix together the filling ingredients and refrigerate covered for at least 2 hours. 2. Place a teaspoon of filling at the bottom of a wrapper, fold in half and press to seal. Grab the edges and pinch together. For the stock: 1. In a pot, combine chicken and water. Bring to a boil and simmer for 45 minutes. Debone the chicken and shred. Season the stock with patis, salt, and pepper. 2. Keep the stock simmering and add shrimp. Cook for 2-3 minutes. Take out the shrimp and remove the heads and shell. Chop the shrimp and set aside. Mash the heads and shell with a bit of stock and squeeze out the liquids back into the pot. 3. In the pot of simmering stock, add the dumplings and simmer for 1 minute.
