In a large oven-safe casserole dish, heat the oil over medium heat. Brown the chicken on both sides and set aside. Add onion, carrots, and celery, cooking until softened. Return the chicken to the dish, pour in the chicken stock, add the thyme, garlic (and tomatoes if using), cover, and place in the oven for 1.5 hours check if the chicken is tender. Stir in the double cream and any optional veggies, cover again, and return to the oven for an additional 30 minutes. For the Mashed Potatoes: Boil potatoes in salted water until soft. Drain and mash with milk (or cream), and season with salt and pepper to taste. Overnight Oats Ingredients: 500g porridge oats Enough milk to cover the oats (adjust to your preferred consistency) Half a packet of mixed seeds (such as chia, flax, and pumpkin seeds) Fresh or frozen raspberries (for compote) Half a bar or packet of dark chocolate, melted Instructions: Combine the porridge oats, milk, and seeds in a large bowl or jars. Stir well, cover, and refrigerate overnight. Heat raspberries in a saucepan over medium heat then top with raspberry compote and Drizzle melted dark chocolate over the top. Granola Bars Ingredients: 500g porridge oats 1 jar honey Half a jar peanut butter Half a packet of mixed seeds Half a bar or packet of dark chocolate, melted Instructions: In a large bowl, mix porridge oats, honey, peanut butter, and seeds until well combined and sticky. Press the mixture firmly into a lined baking dish, smoothing the top with the back of a wet spoon. Chill in the refrigerator for 1-2 hours, or until the bars are firm enough to slice.
