@devinedwelling: It’s December! And what better way to ring in the season than with a comforting bowl of soup 😋 Here’s the recipe 👇 Ingredients: 1 large or 2 medium butternut squash 4-5 carrots 1 small onion 3 cloves garlic 1 “nub” of ginger (probably like 1 tablespoon) Sage leaves (6-7) 2 bay leaves Salt @redmondrealsalt (use to taste) I probably used 1 teaspoon to roast the vegetables and then an additional 1-2 teaspoons on the stove. Prepare: Peel & Chop squash, carrots, onion into 1 inch pieces. Toss with olive oil (about a tablespoon) and roast at 400 degrees for about 30-40 mins or until tender and roasted. Prepare aromatics. Peel and chop the garlic, and ginger and gather bay leaves and sage. Bring 1 box of chicken broth to a boil and add roasted veggies and aromatics and you guessed it…salt. Bring back to a boil and let simmer for 25-30 minutes. Remove bay & sage leaves & transfer to a blender and blend until smooth. Pour into a bowl and top with some heavy cream (about a tablespoon). I enjoyed mine with some fresh toasted and buttered sourdough. SO GOOD! lmk if you try it 💁♀️ #soupseason #souprecipe #butternutsquash #homemade #healthyrecipe
