@michellek23_: CINNAMON ROLL COOKIES A chewy vanilla bean base cookie with chunks of cinnamon roll filling. Topped with a sweet cream cheese glaze! Cinnamon roll filling: 70g butter softened 1 tbsp cinnamon 100g brown sugar Cookie dough: 227g unsalted butter (softened to room temp) 1/2 tbsp vanilla bean paste 290g granulated sugar 2 large eggs 420g all purpose flour 1 tsp cream of tartar 1 tsp baking soda Pinch of salt For rolling the cookie : 50g granulated sugar 1 tbsp cinnamon Making the cinnamon roll filling first! In a bowl, add the softened butter and whip it until fluffy. Add in brown sugar and cinnamon. Mix again. Scoop small tsp dollops of the cinnamon mixture on s baking sheet and place in the freezer until frozen. Make the dough! Preheat oven to 350f. In a bowl, add in the softened butter and mix until fluffy. Add in the sugar and mix again. Add in the vanilla and eggs. Mix until combined. Sift in the flour, cream of tartar, baking soda, and pinch of salt. Use a spatula to fold everything together. Take the frozen cinnamon filling out and incorporate them in the batter. Fold them in! Use a 2 oz cookie scoop and shape the dough. Roll the cookies in the cinnamon sugar mixture. Place on baking tray. Bake for 11-12 minutes! They do spread a bit. i used a round cookie cutter to swirl the cookies to shape it. You can scoot the edges toward the center gently!
