🥬 Braised cabbage 🥬 this is the perfect no waste centrepiece for pesach if you’re avoiding animal products and Kitniyot!  1 large white cabbage  Oil for frying  500ml warm stock of choice  Water to steam the remaining cabbage in The juice of half a lemon for the cabbage puree I big bunch of herbs of choice – or if using a mix, use a small bunch of each. We used a mixture of dill, parsley, coriander and a few mint leaves  The juice of a lemon  Extra virgin olive oil  Take the whole cabbage and cut in half. Cut one of the halves into wedges. Heat up a pan of ½ cm of oil on a medium heat and brown the wedges on all sides  Pour over the stock of choice and season with salt and pepper  Cover with a lid of tin foil and transfer to the oven at 190 for 1 hour until the cabbage is soft but still holding its shape  Take the remaining cabbage half, chop up and place into a steamer for 20 minutes until falling apart  Once soft, place into a magi mix, season with salt and pepper and the juice of half a lemon  Blitz until soft and smooth – this can take 5-7 minutes  Once done, move on to the herb dressing. Place a big bunch of the washed herbs of choice in to the magi mix – we used dill, parsley and coriander with a little mint. Along with the juice of 1 lemon and mix well – add drips of water if need be  Finish the dressing with seasoning and the lemon juice and a drizzle of extra virgin olive oil to taste  Once all the components are ready, assemble by spreading the puree on the bottom of the plate Place the roasted cabbage on top and drizzle over the zingy herb dressing  Serve immediately.
