I added a slight twist to the strusel and added my own touch with the caramelized bananas šš¤¤ 2Ā cupsĀ all-purpose flour 1Ā tspĀ baking powder 1Ā tspĀ baking soda 1/2Ā tspĀ salt 1Ā tspĀ ground cinnamon a dash of nutmeg 1/2Ā cupĀ salted butterĀ , softened to room temperature 1/2Ā cupĀ brown sugar 1/2Ā cupĀ white sugar 2Ā large eggsĀ , at room temperature 4Ā very ripe bananasĀ , mashed with a fork 1/4Ā cupĀ buttermilk 1Ā tspĀ vanilla extract strusel topping: 3Ā tbspĀ flour 1/4Ā cupĀ brown sugar 1/4Ā tspĀ cinnamon 2Ā tbspĀ unsalted butterĀ , slightly softened and cut into pieces 1/3Ā cupĀ chopped pecans caramelized bananas: 3 bananas, sliced 3 tbsp butter 2 tbsp brown sugar instructions: 1. Preheat oven to 325 degrees F. Grease or add parchment paper to a 9x5 inch loaf pan. Set aside. 2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon and nutmeg. Set aside. 3. Cream the butter and sugars in a large mixing bowl until light and fluffy. Add the eggs, one at a time, beating well in between each addition. Gently mix in the mashed bananas, buttermilk and vanilla. 4. Slowly stir in the dry ingredients. Once the flour is incorporated, stop right there. Do NOT over stir. 5. Pour the batter into the prepared loaf pan. 6. To make the steusel topping, add the flour, brown sugar, cinnamon, pecans and butter in a medium bowl and mix until it comes together in clumps. I find itās easiest to mix with my hands. 7. To make the caramelized bananas. Preheat a large pan to medium heat. Add the butter and once melted, add the brown sugar. Stir until itās disolved and add bananas. Let them simmer for a few minutes on each size until golden brown. 8. Place the caramelized bananas down the center of the banana bread and sprinkle the streusel topping evenly on both sides. Bake the bread for about 1 hour or until a toothpick inserted into the center of the loaf comes out clean. 9. Remove from oven and cool 10-15 minutes in the pan. Remove the bread from the pan and continue to cool on the wire rack. Serve warm or at room temperature.āØ #bananabread #fundesserts
