When I saw these muffins on @onceuponachef blog I had immediately try them because she never steers me wrong and boy oh boy were these SO incredible. They’re so light and fluffy and the cinnamon and nutmeg are just the perfect combination with the zucchini and chocolate. Ingredients: - 2 c all purpose flour - 1/2 tsp baking powder - 1/2 tsp baking soda - 2 tsp cinnamon - 1/4 tsp nutmeg - 1 stick of melted salted butter - 1 cup packed brown sugar - 2 eggs - 2 tsp vanilla - 1 grated zucchini - 1/2 cup milk chocolate chips Steps: 1. Preheat oven to 350 2. Whisk your flour, baking powder, baking soda, cinnamon and nutmeg in a bowl and set aside 3. Whisk your butter and brown sugar together then add your eggs and vanilla 4. Fold in your grated zucchini and then slowly add your dry ingredients 5. Add chocolate chips 6. Pour into a greased muffin pan and add extra chocolate chips to the top if you want 7. Bake for 20-23 minutes #fallrecipes #muffins #muffin #baking #bakingrecipe
