Kibbeh bel suniyeh  ✨The Syrian way ✨  Using the tray to form the top layer first was inspired by @Baiti ana Love this idea!  Outer shell  3 cups fine bulgar  1 large onion, sliced 1.5 lbs very fine lean ground beef (habra/kibbeh meat) 2.5 tsp salt  1/2 tsp black pepper  2 tsp Aleppo pepper 1/2 tbs ground cumin Filling 2 tbs olive oil 1 large onion, diced finely 2 lbs ground beef 2.5 -3 tsp salt (to taste) 1 tsp black pepper  2 cups walnuts, chopped Ghee  Nuts for topping Yogurt to serve 1. Filling: cook the ground beef in olive oil just until browned and releasing liquid. Add the finely diced onion and salt and pepper, and cook on medium low for about 15 mins or until onions are super soft and liquid has dried up. Turn off the heat and add chopped walnuts.  2. Outer shell: Place burghol in a large bowl and add just enough water to cover the burghol. Let it soak for 15 mins, then fluff up with a fork. Add the habra/kibbeh meat, onion, cumin, salt, Aleppo pepper and black pepper. Mix first with your hand and then run the whole mixture through a meat grinder, twice. Knead for a couple minutes to make sure everything is incorporated, set aside.  3. Assembly:  Step 1 - line your large round tray with a layer of plastic wrap. Add half the dough and smooth it out into an even layer, dipping your hands in water to prevent the dough from sticking. Then lift the plastic out of the tray with the layer of dough and set aside for the top.  Step 2 - grease the same tray with ghee. Add the second 1/2 of the dough and smooth it out until even, using water to help Step 3 - sprinkle an even layer of the beef filling Step 4 - flip on the top layer, then peel off the plastic and smooth it out  Step 5 - Cut whatever design you’d like, top with nuts of your choice (untoasted). Top generously with dabs of ghee all over. Bake at 400 for 50 mins or until browned and edges are crispy.  Cool slightly, enjoy with laban
