Brush avocado oil into an 8x8 baking tray (or use cooking oil choice). In a medium bowl, mix together the dry ingredients-oats, flour, protein powder, cinnamon, and baking powder. In another bowl, whisk together the liquid ingredients-almond milk, almond extract, maple syrup and cottage cheese. Pour over the dry ingredients and mix until incorporated.
