it's probably more accurate to say that a polar bear doesn't have white fur, but they ARE white. Much in the same way the sky is blue. what we're seeing isn't actually the same as most things' color-

Leaves aren’t actually green. They actually reflect green light waves which our eyes interpret as green

Not trasparenr, most probably translucent which is kinda white. So in conjunction the flur looks white. Same as putting few layers of translucent paper.

Snow is the same. Ice is clear, air is clear, tiny bits of ice with air between them (snow) is white. And you can't see whatever is underneath.

The sky isn't actually blue. It presents as blue light. That then goes into your eyes and gets interpreted as blue.

It’s the same concept as a candy maker folding air into candy. He doesn’t add any color but with all the tiny air bubbles inside it reflects light in a certain way to appear white.
